3 chicken gizzards
3 chicken livers
1/4 cup butter or margarine
1/4 cup green onions, finely chopped
1/3 cup white or yellow onions, finely chopped
1 cup chopped celery
1/2 cup chopped green bell pepper
1/4 cup parsley flakes
3 cloves garlic, crushed
1/2 pound ground beef
1/4 tsp thyme
red pepper to taste
salt to taste
4 cups cooked rice
Preheat oven to 325 degrees
1. Cook gizzards in water to cover until almost done. Add livers, cook until tender. Chop.
2. Heat butter in large skillet. Add green onions, yellow or white onions, celery and green bell pepper. Cook over low heat until vegetables are soft. Add parsley flakes, garlic, giblets and ground beef.
3. Cook over low heat for about 20 minutes, stirring until well blended. Add thyme, salt and pepper. Add rice, mix well.
4. Spoon into casserole. Bake in oven for about 20 minutes or until bubbly.
